Today in class I read an article about the misuse of the phrase "Asian food". This term is very wrong because in Asia there are 48 countries, all having their own cultures and foods. But whenever we western people hear it our minds are most likely going to go to a mix of Chinese and Japanese cuisine. What I got from this, still may be wrong,  but humans tend to generalize things that in hindsight can't really be generalized. I also believe that since we do not live in Asia, western folks may not think of it as a responsibility to know all the different cuisines from around the world. This could also do with the sizes and wealth levels of each country. When you think of Asia the first countries to come to mind are China, Japan, India, Korea. In reality, there are so many more countries that we don't know a whole lot about. The popularity of the countries in Asia tends to determine what Asian food is.
